Our whitefish up here are really great tasting whether it be fried, grilled, boiled or smoked but the Tulibuees(Herring) are found in shallow muddy water so they are greasier and stinky. Whitefish is my favorite fish to eat but herring is my least favorite.

....electric knife...cut of the head then cut back to the butt hole.
Tear out everything and use a grapefruit spoon to knock out the blood pocket....rinse...plug nose!!!

there different bigwade. whitefish get bigger.whitefish can get 7-8 lbs and tullibee average 2lbs. you can tell by the mouth for the most part. tullibees mouth faces down moreso and a whitefish mouth is upward. i have a 6lb whitefish from leech lake mounted. oh yea another way to tell the difference a tullibee sheds its scales A WAT LOT EASIER than whitefish.

Again thanks to my friend CK..

Tullibees are in the cisco family. Ciscoes are much smaller than the tullibee. Tullibees can grow to 4 or 5 lbs., but a more average size might be in that 1.5 to 2.5 lb. range

Question to anyone that cleans tullibees or whitefish.  What is the easiest way to get the job done?  I cut the head off, then split the belly, unload the guts, rinse under cold water and get out the blood line.  The one problem I ran into was getting the intestine off the anus.  I have a gut pile hanging from the butt of the fish.  I'm mostly a catch and release fisherman so I'm not the best with a knife.  

Another way to handle these fish (If your going to have them smoked or smoking them yourself) is to take off the head and instead of cutting up the belly of the fish, Cut right along the back bone on one side or the other leaving the belly skin to hold the two halfs together. I just cut down to and around the vent and pull it out that way. I like cutting them along the back because some of these fish are so thick that the meat if left together doesn't get fully smoked. I like my fish smoked pretty hard and this is just one way of insuring that they will get done all the way through. Still cleaning out under the backbone with a spoon works just the same. Just one other way of doing it I figured I'd throw out there.

Yep, went right back to the shoot.  I'm guessing it just takes a little more practice.  There was a lot of cartilage around the pooper and it was kind of tough going.  Next time, I'll cut to the butt, cut around the opening and hopefully it will resolve.  My brother told me that he cleans his trout by snapping the lower jaw and pulling.  He said everything comes out at once.

sounds about right. may have to cut the poopshoot off. i use an old toothbrush to clean out the backbone area. i've also filleted them foe pickling and doest work to bad. do you cut the stomach open all the way back to the poopshoot??????? that may help.

dont know if you already use the soy sauce, but to me thats a key ingredient, just enough to darken the water. about everyone around my area that smokes anything uses it. just an idea everyones got there own thing going!!

I might try that onion soup mix idea.  I used a decent amount of onion powder and garlic powder in my brine, but I always like to experiment.

pretty hard to screw up a brine as long as you go by the enough salt to float an egg theory. i like to add soy sauce, worchester sauce and once in a while an envelope of dry onion soup mix.

I've had my mitts in a few places thumbsup, however nothing like those tullibees.  BTW, ate one last night and the smoker served me well.  Found a brine recipe online and it turned out great.

Tips when catching tullibees…bring a fish rag. They are slimy and stinky. You see there is no easy way to grab them when they get to the hole and they squirm like crazy.

Got two big bees in the Aitkin area on Saturday.  I was hoping for smaller fish, but only had two biters and they were bigger.  Soaked in brine and finished the smoking process last night about midnight.  Can't wait to try them out tonight.  I've had them store bought, but never done them on my own.

Smoke up them Tullies...

Smoking tullies is pretty easy. Making a salt brine to where an egg will float is the ticket then soaking them for 24 hours is key. Once you have done that it takes 5-7 hours in a smoker at about 225 degrees. There is a difference in timing depending on how large they are. The bigger the fish the longer they take. The trick is to not end up with them too dry or too wet. It does take a bit of practice ,but boy oh boy what a great treat you’ll end up with if done properly.

Im just gonna pay someone to do it for me :)  Never had them so thought we keep a bunch and give it a shot.

Went out of terry's boat harbor, my uncles been getting fish out there but its off and on.  Fishing wasn't the greatest but we got fish...

ended up keeping 24 perch 2 walleyes and 15 tulibee (SP) for four guys.  Those where our first ever tulibee so that was cool.
